The rain is falling. My daughter is sleeping. My favorite football team is on and I am soaking up this moment of pure mommy time. I am starting my next fitness challenge on Monday so I am planning for my week of clean eating. The toughest part for me on this journey
PUMPKIN SHAKEO BLONDIE BARS
Ingredients
* Preheat oven to 350°F. Lightly grease or spray a 8×8 square baking pan.
*Grind the oats in a food processor until flour-like consistency.
*Add pumpkin, shakeology, yogurt, egg whites, and maple syrup, and process until smooth. Add rest of the ingredients and process until completely mixed.
*Transfer batter to a bowl and fold in rice cereal. Spread batter evenly into prepared baking pan.
*Bake 25-30 minutes until set, and a toothpick comes out clean.
*Allow to cool completely, then press down on the bars with a flat spatula to compress the bars a bit. This is optional, but it makes the bars a little denser (more like a blondie).
*Cut into 12 bars. They can be stored tightly sealed in the refrigerator or freezer. Eat them cold, right from the fridge, or let them come to room temperature (or microwave and serve warm). Enjoy:)
is my love for sweets. It has drastically changed since I started drinking Shakeology in February. I do not crave sweets every day like I use to but this time of year all I can think about is PUMPKIN. I love pumpkin everything. I decided today I better sit down and find some healthy pumpkin recipes for the next month of my challenge. I came across one that I had to share with you guys.
