I am a huge TATER TOT lover. Anything that has potatoes in it you can count me in. I was a little skeptic I must admit when someone told me that you could make broccoli tots. My daughter use to eat broccoli when she was younger but lately she is staying away from anything healthy. I wanted to see if maybe these broccoli tots would make her love broccoli again. I decided we would make them together and pray they turned out ok. She had a lot of fun helping me make them and she had a lot of fun eating them. I love it when she eats something good for her and she says yum. This is yummy mommy. I totally recommend these to any mom who is wanting to add more veggies into their kids life or find an alternative to fries:)
Ingredients:
3 cups of cooked,chopped broccoli
1 cups of cheese of your choice
1/2 cup of Panko
salt and pepper to taste
2 eggs
Directions:
Preheat oven to 400, cook broccoli and chop fine. Mix the other ingredients in a bowl and add broccoli to it. Spray a mini muffin pan lightly with cooking oil. Scoop mixture into pan and press firmly. Cook for 20 minutes or until top is golden brown. It should make about 20 of them. ENJOY:)
