I usually will cook the harder veggies ahead of time. You can add broccoli, red onion. carrots. Basically anything you want to add you can:) These keep well.

1/4 cup unsweetened almond milk
1 cup cup spinach
1 cup red peppers
Mrs Dash sprinkled
Spray muffin tin with coconut oil
Combine ingredients and mix well
Pour equally into muffin tins
Bake for 15 mins until egg is done
