This is so good you will want to lick the plate. I came across this recipe watching Trisha Yearwood's cooking show on the Food Network. I changed a few things but not much. This is something I will make weekly. I hope you enjoy it. The chicken goes great with a side of orzo pasta or a salad. I will share a yummy orzo side dish next:)
Ingredients
2 servings
1/2 cup Apricot Jam
2 tablespoons of olive oil
2 tablespoons of Dijon mustard
1 tablespoon of honey
1/2 tablespoon of soy sauce
1 teaspoon of orange zest
1/2 teaspoon of garlic
1/2 teaspoon of thyme
1/2 teaspoon of basil
Himalayan salt and pepper
2 boneless chicken breasts
Instructions
In a medium saucepan over medium-low heat, heat the jam until melted, about 2 minutes.
Transfer the jam to a baking dish.. Add the olive oil, mustard, honey, soy sauce, orange zest, garlic, herbs, 3/4 teaspoon Himalayan salt and some pepper and mix until combined.
Season the chicken with additional salt and pepper and add to the marinade. Gently flip until mixed and coated. Marinate in the refrigerator if possible for at least 15 minutes. It taste good even if you are not able to marinate chicken.
Bake at 375 until the chicken is cooked through and the juices run clear, about 30 minutes.
