My husband and I have been really focusing on our eating lately. He actually requested a healthy version of a blondie brownie for his birthday this week. I have never made a blondie before so this was fun. My daughter helped me:) If you make these brownies a day or two before serving them warm up the brownie, melt the chocolate, and drizzle it over the serving slices. Here is how we made these blondies.
Ingredients
2 1/4 cups of whole wheat flour
1/2 cup of coconut sugar or stevia
3/4 cup of light brown sugar
1 teaspoon baking soda
½ teaspoon salt
12 Tablespoons UNSALTED butter, softened
1 Tablespoon vanilla extract
2 large eggs
1½ cups white chocolate chips
additional chocolate chips, for topping

Instructions
- Preheat oven to 370F degrees. Line a 9x9 inch baking pan with aluminum foil and spray with non-stick cooking spray. Set aside.
- Mix together the whole wheat flour, baking soda, and salt in a medium size bowl. Set aside.
- In a large bowl, using a hand mixer or standing mixer, cream together the butter, coconut sugar, light brown sugar, and vanilla extract until combined.
- Add eggs one at a time, mixing between each egg.
- Add flour mixture and mix until just combined. Make sure not to over mix. It will be more like a dough than batter.
- Using a spatula or your hand, stir in white chocolate chips until combined.
- Press dough into baking dish. Bake for 20-23 minutes or until edges are lightly golden brown. Let bars cool completely before cutting into squares.
- Once cut into bars and before serving, melt the rest of the white chocolate chips on stove. Fill a pot with some water, place a bowl over pot and add chips. Stir occasionally while they are heating up. Heat at medium high. Once melted pour over served brownie. Enjoy!
