Shakshuka
I came across this amazing dish on Team Beachbody's recipe section while I was working on some meal plans for my upcoming challenge group. I tweaked it some but it is really tasty, easy, and filling. It is healthy and is perfect for my 21 Day Fix eating plan. Here is how I made it.
Ingredients
(serves 2 with a side of fruit)
1tbl of EVOO(olive oil)
1/4 cup green peppers
1/4 cup red onions
1 garlic clove
1/2 cup spinach
1/2 can of whole tomatoes with juice
1 tsp cumin
1-2 tbls of feta cheese
2 eggs
Instructions
In a skillet, I poured a tablespoon of extra virgin olive oil and added chopped green peppers, red onions, spinach, and garlic. Cook until softened. This took about 10 minutes.
I then poured half a can of whole tomatoes into skillet. I let this simmer until thickened. Sprinkle cumin and stir
Then I added feta cheese and stirred it around skillet.
Next crack 2 eggs into skillet and sprinkle with salt and pepper.
Put dish in stove and bake for 15-20 minutes until eggs set at 375 degrees. I cooked this in a cast iron skillet. Make sure whatever dish you use can go in the oven. Eat and enjoy:)
