With the holidays comes LOTS of traditions for my family of baking tarts, cookies, cakes, and so much more. Every Christmas we would go to my Mom's house and bake cookies and of course decorate them:) We made some really good memories. We lost our mom in March in a car accident so this being the first holiday season without her is going to be rough. My sister and I are making our best efforts to make sure we spend Thanksgiving and Christmas together especially this first year. We will be baking those cookies on Christmas Eve and laughing at all the funny memories we had with our mom. For those of you who were not lucky enough to know her, she could make you laugh so hard that her and you would pee your pants. It is the truth. In honor of my mom and all the traditions she loves, I am going to start a new tradition with my daughter. My daughter missed out on the fun times with Nana so I want to keep my mom's memory alive and in her heart forever. Abigail picked out a recipe she wants us to make this Christmas. She got it from the Pampered Chef recipe book my mom gave me. I wanted to share it with you all as well. Candy Cane Brownie Lollipops
Candy Cane Brownie Lollipops
- 1 pkg (18-21oz) fudge brownie mix (plus ingredients to make brownies)
- 24 candy canes
- 10 oz chocolate-flavored almond bark
- Additional decorations such as red jimmies (optional)
- Line medium sheet pan with a 13-in piece of parchment paper; lightly spray with nonstick cooking spray and set aside. Prepare brownie mix according to package directions; pour batter into pan. Bake 30 minutes or until wooden pick inserted in center comes out with moist crumbs attached. Remove from oven to cooling rack and cool 20 minutes or until still slightly warm.
- Meanwhile, cut off straight ends of candy canes to form 4 1/2-in. sticks. Place candy cane tops into resealable plastic bag and crush using flat side of meat tenderizer, set aside.
- Using a medium spoon, scoop brownie into 24 rounded scoops, packing brownie into scoop using hands. (Entire brownie will be used.) Roll brownie scoops into smooth balls. Insert candy cane sticks into centers of balls, mounding brownie around stick.
- Place almond bark into a small bowl; microwave according to package directions until melted and smooth. Spoon melted bark evenly over each brownie ball, turning to coat completely. Allow excess bark to drip off. Dip into reserved crushed candy canes or additional decorations and stand upright on a piece of parchment paper. Repeat with remaining almond bark, lollipops and crushed candy. Let stand until set. Place into miniature cupcake liners. Makes 24. Enjoy:)
