Vanilla Apple Cinnamon Crepes
I have been wanting to make crepes for a long time and I finally did👏 I got this recipe from my new skinnytaste cookbook. I tweaked it a little. I did not want to use sugar, milk, or butter. I kept it simple but it was yummy.
Serves 6
1 cup of unsweetened almond milk
1 large egg white
1 large egg
1 tsp of coconut oil
1 tsp of vanilla
1 tsp of cinnamon
1 cup of whole wheat flour
Filling
2 apples
1 1/2 cups of water
Cinnamon and honey to flavor
Combine almond milk, eggs, coconut oil in a bowl and mix with mixer or blender by pulsing. Add whole wheat flour, vanilla, and cinnamon to mix and pulse until smooth. Add more flour if to thin. Batter should be thin but not watery.
Heat a non-stick pan on medium low heat. Spray with coconut oil. Take 1/4 of batter and pour in center of pan. Swirl pan to thin and spread batter. Cook for 2 minutes until sides are browning. Flip with spatula and cook on other side for 1 minute.
You can make different fillings for these. Strawberry filling is amazing. I cooked apples on the stove. I peeled and cubed 2 apples. Cook in 1 1/2 cups of water with some cinnamon and honey until soft. Make sure your water does not cook out. Once softened you can cook your crepe. Once cooked fill the crepe with some apples and fold over. Top with vanilla greek yogurt and honey. You can refrigerate any left over batter. Enjoy:)
