Soup screams cooler weather to me. I made this soup the other day and it was so quick and delicious. A real hit for the whole family. You can cook it in a crock pot and let it marinate or you can throw it together for a quick meal. I used my dutch oven and let it simmer.
1 lb chicken breasts
1-2 tbl coconut oil
1/2 onion
1/2 tomato
4 cups great northern beans
2 cups fat free, low sodium chicken broth
2 cups thick and chunky salsa (I used mild for a little kick)
1 cup reduced fat mozzarella cheese
1 tbl Chopped cilantro
•Boil or cook your chicken on the stove until done
•If you boil chicken, shred after cooked. Sauté your onions with coconut oil until tender
•If you cook chicken on stove cook with coconut oil and add onion
• Add your chicken broth, tomatoes, beans, salsa to chicken and onions and let simmer for 20 mins
•Add cheese and cilantro for your topping
